Bagel Bob and Susan's Latke Extravaganza

Seasonal Recipe of the Week
On Sunday I drove out to El Dorado (a major adventure for me) to Join Bagel Bob and Susan in their annual post-Hanukkah potato pancake party. I must say it was definitely worth it, as they were the best damn Latkes I have ever had! And I believe it was all due to the type of grater he uses. It's a family heirloom but I was told they can be purchased on line. Mine is already on order! By grating the potatoes through the wire mesh they get really fluffy and light and just plain delicious. The recipe is the basic one we all use but they do squeeze out the excess potato water into a bowl and let the starch settle to the bottom. Then you pour off the water and add the starch back in. Talk about old school! Enjoy the photos!
