Bruncheon Eggs

Seasonal Recipe of the Week
This week we are concentrating on the wonderful idea of having breakfast for dinner. This is one of my favorite and super-easy ways to make eggs.

Ingredients
8 ounces grated Gruyere cheese
4 eggs
2 slices bacon, crisply cooked and crumbled
1 teaspoon chopped chives or scallions
1/4 cup Panko

Procedure
Place one ounce cheese in the bottom of 4 individual buttered ramekins. Break one egg into each dish. Top with bacon, chives, and remaining cheese. Sprinkle bread crumbs over the top. You can actually do this way ahead of time and refrigerate. Bake in a preheated 300 degree oven for 15 minutes or until the egg sets. You can then throw them under the broiler to brown the crumbs a little and serve immediately. Things you could add are goat cheese, avocado, some chorizo or sausage, a splash of hot sauce, the list goes on and on!
