Nutty Edamame Salad

Seasonal Recipe of the Week
All I want in this heat is salads, so here is a recipe using Edaname (which are soy beans!). You can buy them frozen out of the shells at our local supermarkets Yum! And super nutritious.

Ingredients
1 pound shelled Edamame
1 red bell pepper, chopped
2 scallions, chopped
1/4 cup red onion, finely chopped
2 tablespoons chopped mint
1/4 cup chopped cashews toasted
2 tablespoons sesame oil
2 tablespoons Tamari
1 tablespoon red wine vinegar
3 shakes Tabasco sauce
Freshly ground pepper, optional to taste

Procedure
Place shelled edamame in a pot of salted boiling water for 3-5 minutes. Drain, rinse with cold water and cool before mixing with the remaining ingredients. Mix together oil, vinegar and sauces in a small dish and adjust amounts as desired. Toss dressing, edamame and all other ingredients together well in a large bowl. Serve. You could also add some grilled shrimp and call it a meal.
