Guest Marsha Meehan: Microwave Baked Apples

Seasonal Recipe of the Week
On Saturday's one-hour New Year's Day Spectacular, Bram's mom Marsha was a great guest and did a special segment on brunch ideas. She shared this microwave-baked apple dish with us. It's originally from Cooking Light magazine.

Ingredients
2 cups dried cranberries
1 1/4 cups coarsely chopped walnuts
1 cup packed brown sugar
1 cup water
2 teaspoons ground cinnamon
6 Gala Apples, cored and chopped (about 3 pounds)

Procedure
Combine all ingredients in a large microwaveable-safe dish. Microwave on high for 20 minutes or until apples are soft, stirring occasionally. Serve these juicy baked apples over slices of pumpkin bread, warm bowls of oatmeal, or pancakes. Ida Red and McIntosh apples also work well. Yield: 6 cups
