Earl Grey Tea Dinner Rolls

Seasonal Recipe of the Week
This is one of my old favorite recipes which I just re- discovered. Its for a delicate dinner roll infused with Earl Grey tea and lime zest.This one could make you famous

Ingredients
1 Tablespoon loose Earl Grey tea leaves
1 cup boiling water
1 Tablespoon yeast
2 tablespoons sugar
2 tablespoons melted butter
1 t Kosher salt
zest of 2 limes
3 1/4 cups AP flour

Procedure
Put tea in a warmed tea pot and add boiling water. Let steep covered for 15 minutes, strain and cool. Put yeast and sugar in large bowl and pour luke warm tea over them. Let sit 10 minutes then add melted butter, salt, lime zest and enough flour to make soft dough dough. Cover and let rise till double about 30 minutes. Turn dough out onto floured surface and punch down. Let rest 10 minutes. Tear off 1 ounce pieces and form into balls. Place on parchment lined baking sheet. Let rise 20 more minutes till doubled in size and then bake in a 375 degree oven for 10-15 minutes till golden brown. The smell will kill you as well as the flavor. This recipe makes 20 small rolls.
