Oatmeal Lace Cookies

This is a great holiday cookie and it does not require any of that messy rolling and cutting out of dough. You can use these light and airy cookies to make elegant ice cream sandwiches or roll them into tubes and fill them with mousse. They can also be draped over shot glasses and made into bowls or even hats!

Ingredients
3 tablespoons flour
2 1/4 cups rolled oats
2 1/4 cups light brown sugar
1 teaspoon salt
1 cup (2 sticks) butter
1 egg
1 teaspoon vanilla

Procedure
In a large mixing bowl, stir together the flour, oats, sugar, and salt. In a small saucepan gently melt the butter. Mix into the dry ingredients. Beat the egg and vanilla together and stir into the rest of the mix. Drop the dough in small teaspoons on a sheet pan lined with parchment which has been lightly oiled. Allow plenty of room between cookies as they will spread big time. Bake in a preheated 350 oven for 5-7 minutes. Let cookies cool a few minutes before trying to remove them from sheet pan.If you are going to shape them into bowls or tubes only make 4 at a time because your window of opportunity to shape them is very short.
