The Altitude Adjustment Section
These are baked cookie bars, which are fudgy and moist and are studded with chocolate chips. Altitude means nothing to them. I think that pretty much sells it, don’t you? This recipe is from The King Arthur Flour Cookie Companion, the best cookie cookbook I have ever encountered.
Ingredients
6 tablespoons unsalted butter
1/2 cup peanut butter
1 cup granulated sugar
1 cup flour
1/4 cup dark brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1 cup chocolate chips
Procedure
Preheat oven to 350. Lightly grease a 9x9 inch pan.In a medium bowl, cream butter and peanut butter together till smooth. Add sugars and keep beating. Beat in eggs one at a time. Scrape down sides of the bowl. Stir in vanilla. In a separate bowl, whisk together flour, salt and baking powder. Add to peanut butter mix. Stir in chocolate chips. Spread batter into prepared pan. Bake for 30 minutes, or until the edge just barely comes away from the pan. Let cool in pan before cutting. Pace yourself!
