Caraway flavored Vodka

Refreshing Beverage of the Week
You think flavored Vodkas are new, well you are so wrong. Home cooks have been making infused beverages at home, which start with Vodka, for years. Here is a recipe for a caraway drink which I think is pronounced Kummel. Please don’t write in with corrections on that. I do the best I can.

Ingredients
1 tablespoon caraway seeds
1/4 teaspoon fennel seeds
1/4 teaspoon cumin seeds
3 cups vodka
1/2 cup sugar
1/2 cup water

Procedure
Add all the seeds to the Vodka in a jar and let stand 3 weeks, shaking occasionally. I never said this was fast! Then strain out the seeds. Make a simple syrup with the sugar and water and boil for 2-3 minutes. Skim off any foam on the top, let cool, and mix with infused Vodka. Pour through a funnel lined with a coffee filter to get out any loose bits of seeds into a clean jar which has a tight fitting lid. This will keep indefinitely at room temp. Good with a nice herring appetizer.
