Avocado Wontons

Seasonal Recipe of the Week
This is a standard at the catering company where I work. How can something so simple be so delicious?

Ingredients
2 ripe but firm avocados
1/4 cup lime juice
1/4 teaspoon ground cumin
1/2 teaspoon chopped garlic
salt and pepper to taste
1 pack wonton wrappers
1/2 cup water mixed with one egg
oil for deep frying

Procedure
Cut avocados into small cubes by scoring each half of avocado (after you remove pit ) and then use a spoon to carefully remove the flesh. Place in a bowl with the lime juice, garlic, cumin, salt and pepper. To assemble the wontons lay out 4 wonton wrappers and brush edges with egg wash. Place one piece of avocado in the center of each wrapper and gather the corners together to make a little purse.These can be frozen at this point or cooked off. To cook, get a pot of vegetable oil very hot and carefully lower about 6 into the oil at a time. They should cook very fast. The wrappers will get golden brown and bubbly. Serve immediately. You may serve these with a cilantro dipping sauce.
