Herb and Citrus Yogurt Granita

How about a simple little recipe which incorporates sweet and savory — garden herbs to be specific — in a light, no-bake dessert that's great with some grilled apricots as garnish?

Ingredients
1/2 cup honey
2 cups plain Greek yogurt
1 cup fresh citrus juice, (tangerine, lime, Meyer lemon, orange or combinations are excellent)
1/4 cup citrus zest
2 tablespoons fresh thyme leaves
1 tablespoon fresh rosemary leaves, chopped fine

Procedure
Whisk together all ingredients in a medium mixing bowl until well combined. Pour in a shallow metal pan and allow to freeze. Remove from freezer and break up and throw into your food processor the pulse till evenly broken up. Refreeze and puree again. Let sit at room temp or in fridge 15 minutes before serving and break up again if necessary. Garnish each serving with a sprig of thyme.Or you can give it a smoother texture by processing the mixture in your ice cream maker. That method gets my vote!
