Low-Cal But Still Lovely
Here is a great raw salad to keep you chewing, happy, and full of vitamins!
2 large raw beets
1 Granny Smith apples
1 stalk celery
1 large carrots
1/2 cup fresh chopped pineapple
1/4 cup fat free mayo
1 tablespoon fresh pineapple juice
1/2 cup chopped walnuts or sunflower seeds
juice of 1 lemon
2 tablespoons (optional) sugar
Peel carrot, beets, and apple. Coarsely grate in the food processor or by hand. Now combine all the rest of the ingredients and toss to coat. Chill at least 20 minutes before serving to allow the flavors to blend. Serve on a bed of fresh greens.
