Corporate Lunch in Manhattan

Corporate Lunch of the Week

This is a menu from a tasting I did this week. The goal was to make a healthy, interesting lunch with the best ingredients available — kind of a great opportunity! There were other physical limitations, but as everyone knows, when using great ingredients, less is more.

Gazpacho Amarillo with Diced Mango and Mint Chiffonade
Green Soba Noodle Salad with Julienne Spring Vegetables and Black Sesame Seeds
Poached Shrimp with Ras el Hanout Dressing
Arugula and Fennel Salad with Roast Sweet Potato, Spiced Pecans
Lime Vinaigrette

Pears Poached in Port with Vanilla Bean and Greek Yogurt Sauce
Trio of Truffles
- Lapsang Souchong Infused Bittersweet Chocolate Truffles
- White Chocolate and Mate Truffles
- Pomegranate and Pistachio Dark Chocolate Truffles
Mocha and Banana Chia Smoothie
