"Pseudo" Baked bean salad

Seasonal Recipe of the Week
I found this great recipe in Pamela Morgan’s cookbook Flavors. Perfect for a BBQ side dish without all the bacon fat, which I love, but am trying to avoid. This recipe serves 4-6 as a side dish.

Ingredients
2 cups cooked Great Northern beans, rinsed and drained
1/4 cup Sherry vinegar
1 tablespoon yellow mustard seeds
1/4 cup sun dried tomato, finely chopped
3 tablespoons Molasses
2 chipotle chilies, chopped
1/2 teaspoon salt
1/3 cup olive oil
1/2 cup diced red onion
1/3 cup chopped parsley

Procedure
In a small bowl, combine sherry vinegar and mustard seeds and let soak 1 hour. In a medium bowl combine seeds and vinegar along with sun dried tomatoes, molasses, chipotles, and salt. Gradually whisk in olive oil. Toss with beans, onions, and parsley. Adjust seasoning and serve immediately. This is also very tasty with black beans.
