Es Apokat: an Avocado Smoothie

Refreshing Beverage of the Week
Keeping with the exotic international flair that we seem to be doing today, here is a thick rich and creamy beverage that you won’t find at Keva juice. Originating from Indonesia, here is a recipe for an avocado drink called Es Apokat.

4 ripe avocados
1/2 cup palm sugar syrup (just a simple syrup but with a slightly caramel flavor)
4 tablespoons sweetened condensed milk
1 tablespoon lime juice
3 cups ice cubes

To make palm sugar syrup, combine equal parts chopped palm sugar and water and bring to the boil and simmer for 10 minutes. Strain and store in fridge. Most supermarkets around here sell palm sugar cones.

To make drink, just put everything in blender and whip till smooth and creamy. Garnish with a slice of lime. Should be consumed while lying poolside with cabana boy nearby!
