This is a very cool bread-baking process Jane shared with us. It uses a basic, rather generic recipe which lends itself to lots of experimentation. If you want more info check out to these websites:

Ingredients
3 cups all purpose flour
1/2 teaspoon yeast
1 1/2 teaspoons salt
1 1/2 cups water
Procedure
Mix all the dry ingredients together. Add the water and continue mixing. The dough will become sticky and gluey. Put dough into a bowl and cover with plastic wrap and let rise in the refrigerator for 18-24 hours. Take out out dough (wetting your hands helps) and put on a floured board and lightly fold dough a few times, then form dough into a ball. Let dough rise at room temperature for 2 hours. Preheat oven and clay pot to 500 degrees. Carefully put ball of dough into hot pot and cover with clay lid. Bake for 30 minutes then uncover for 15 minutes to get a nice crust on top. Don't forget the butter!
